1. Measure the rice . Measure the rice into a measuring cup until it fills to the brim and place it in a bowl or other container that is easy to rinse.
2. Rinse <br>Pour off the first water quickly to prevent the rice from absorbing the bran smell.
(The reason for rinsing rice once before washing it is to remove bran and dust from the surface of the rice.)
3. Washing the rice <br>Wash the rice while stirring gently, repeating this process 3 to 4 times until the cloudy color disappears.
(Nowadays, rice polishing technology has advanced so there is no need to scrub rice as vigorously as in the past.) *Brown rice only needs to be rinsed. No washing is required.
4. Soaking : Soak the rice for at least 30 minutes to allow it to absorb the water thoroughly.
*For brown rice, we recommend soaking it for 1 to 6 hours.
5. Water amount <br>Place the rice in a colander and drain thoroughly, then transfer to the inner pot of the rice cooker.The recommended amount of water is 1.2 to 1.3 cups for every 1 cup of rice.
However, please adjust the amount of water according to the type of rice and your preference of hardness.
(Using filtered water will enhance the luster and flavor of the rice.)
*For brown rice, use about 2 cups.
6. Cooking If you have a rice cooker, turn it on.
If cooking in a pot, cover and cook over medium heat. Once boiling, cook for 2 minutes, then reduce the heat slightly and cook for 3 minutes, then reduce the heat to low and cook for 5 to 7 minutes.
*For brown rice: Bring to a boil over medium heat without the lid on. Skim off the scum, cover and cook over low heat for 45-55 minutes.
7. Steaming <br>In order to distribute the moisture evenly among the rice grains, do not open the lid immediately after cooking.
Leave it for 5 to 10 minutes to steam.
(Some rice cookers include a steaming process.)
8. Cutting the rice : Cut the rice as you dig it up from the bottom of the pot, being careful not to break the rice grains.
By blowing cold air onto the rice grains and removing the steam and water from the surface, the rice is cooked to a smooth texture, glossy finish, and translucent appearance.
